1 lb. 2 oz potatoes, mashed with butter
1-1/3 cup cooked chicken, chopped
2/3 cup cooked ham, chopped
1 T. mixed herbs
2 lg. eggs, lightly beaten
Salt and pepper to taste
Milk
2 cups fresh brown bread crumbs
Vegetable oil for frying
Fresh parsley

Directions:
Directions:
In a large bowl, blend the mashed potatoes, chicken, ham, herbs, and 1 egg. Season to taste. Shape the mixture into small balls or flat pancake shapes as you prefer.

Lightly beat remaining egg, adding a small amount of milk. Place the bread crumbs on a plate. Dip the fritters in the egg and milk mixture and roll in bread crumbs, coating completely.

Heat the oil in a large skillet and cook fritters until they are golden brown. Garnish with fresh parsley.
