5 cups large apples peeled and sliced
5 tablespoons of sugar
2 teaspoons of cinnamon
1 cup of cooking oil (or 1 1/2 sticks of butter - use this)
2 1/2 cups of sugar
4 eggs
2 teaspoons of vanilla
3 cups of flour
1 teaspoon of salt
3 teaspoons of baking powder
1/3 cup of orange juice

Peel and slice apples before mixing with 5 tablespoons of sugar and cinnamon. Set aside in large bowl. Beat well the oil, sugar, eggs, and vanilla. Stir in flour, salt, and baking powder. Add orange juice. In greased tube pan, make layers of batter and apples. Bake 1 1/2 hours at 325. Let cool in pan before inverting. The cake is unusually rich and extra good.
