4-5 Lb. boneless pork roast

1 Tbls oil
2 cloves of garlic minced
1, 28 1/2 oz can pineapple chunks and juice
1 c. sweet pickles and juice (cut pickles into 1 to 1 1/2" pieces
1 16 oz jar of maraschino cherries and juice
1 t. salt
5 t. corn starch
2 Tbls cold water
2 Tbls soy sauce

Directions:
Salt and Pepper Roast and cook uncovered in roasting pan or 9 x 13 casserole at 325 for 35 minutes per pound.

Sauce:
Saute garlic in oil, then remove garlic.
Add juice from the pineapple, cherries and pickles to the oil.
dissolve the cornstarch in the water and add to the juice mixture. Cook over medium heat until thickened.

Baste the roast with sauce every 15 minutes the last 90 minutes of cooking time.

Remove roast from oven and let rest for 10 minutes before slicing. While the roast is resting, heat sauce and add pineapple, cherries and pickles to sauce and heat through.

Place roast on oval platter and spoon fruit around it and serve.

This is a dish I always make during the Christmas Holidays. It is not only tasty but beautiful with the roast surrounded by a ring of green pickles, red cherries and yellow pineapple.
