Flour
Eggs
Salt, Pepper
Parmesan cheese

Directions:
Directions:
Peel the eggplant (some people like to leave the skin on, your choice) thinly slice eggplant and layer on cookie sheet, generously dust with flour and let dry for a few hours.
Mix eggs, salt, pepper and grated cheese. Dip eggplant in this mixture, fry in hot oil, just until browned.
Place the eggplant in a 9 x 13 pan, or similar baking pan, layer with gravy (sauce) shredded mozarella cheese, and Parmesan cheese
Bake 350º oven just until cheese is melted
