4 cups diced rutabaga (3/4 inch dice)
1/2 tsp grated fresh ginger
1 large clove garlic, minced
2 tbs butter
3 tbs flour
2 cups milk or light cream
salt and pepper
3 tbs fresh white bread crumbs
3 tbs grated Swiss cheese

Directions:
Directions:
Place the diced rutabaga in a steaming basket with the ginger and garlic. Cover and steam over 1 inch of water for about 10 minutes, untill almost tender. Boil down the steaming liquid until reduced to 1/4 cup.
Melt the butter in a 2 quart pan, blend in the floour and cook until butter and flour bubble together for 2 minutes without coloring. Remove from heat; when bubbling stops, beat
in the hot vegetable liquid and milk or cream.
Simmer 2 minutes. Season to taste.
Fold in rutabaga and turn into a buttered 6-cup baking dish. Spread on the crumbs and cheese.
Bake 1 1/2 hours at 325 degrees. This needs long slow baking for the vegetable to mellow in its sauce.

This is a side dish I usually serve on Thanksgiving.
Kerry`s dad, Leo grew up with rutabagas as a staple in his diet. We first included this dish to honor that memory, but now continue it because we like it.
