1 1/2 lb large shrimp
10 sprigs fresh parsley
3/4 c dice red onions
1/4 c diced fresh tomatoes
1 lemon
1/4 c garlic butter
2 1/2 tsp Creole seasoning
1/2c white wine
1 (16oz) can light red kidney beans
1 (8.8oz) package pre-cooked white rice

Directions:
Finely chop parsley, (1/4c) and set aside. Peel and devein shrimp, arrange in a single layer for seasoning. Preheat large saute pan on Med-high for 2-3 min. lace onions, garlic butter in pan. cook 2 min. Sprinkle creole seasoning over shrimp. Add shrimp, tomatoes and parlsley to onions. Squeeze juice of 1 lemon over shrimp and cook 1- 2 min. Add wine and cook 2-3 min until shrimp are opaque.
Serve over red beans and rice.
