200 g semi-sweet baking chocolate (we used 2 bars ghiradelli chocolate)
200 g unsalted butter (2 sticks)
4 eggs
2 c sugar
2-1/2 c flour
1 tsp baking powder

Directions:
Preheat oven to 450-degrees. Butter and bread (with plain breadcrumbs) a 2-liter spring pan with removable bottom. In thick-bottomed pan, melt butter and choclate on low heat. Whip eggs and sugar for about 5-10 minutes with electric beater on high speed until fluffy. Mix flour and baking powder well in a separate bowl. Carefully stir the somewhat cooled chocolate mixture into the sugar and eggs. Fold down the flour in the mixture carefully. If you stir too vigorously, the batter will sink.
Pour the batter into the greased and breaded pan. Bake in the middle of the oven for 12-15 minutes. Using a toothpick tester, the cake should be gooey. Serve cold with vanilla ice cream or just some whipped cream.

This recipe is from my friend Jess, whose mother passed away from a brain tumor three years ago. Her legacy of being a great cook and hostess lives on in her daughter. Jess and her family moved to the States when she was 15. Jess dusts the cake with powdered sugar and recommends Edy's Vanilla Bean ice cream or whipping cream sweeten with vanilla, sugar and some raspberries for garnish. Instead of dusting with flour, the breadcrumbs make a great crunchy crust on the cake.
