1 - 10oz. pkg. frozen chopped spinach
(cooked & drained)
2 Tbs. flour
1/8 tsp pepper
1/4 tsp. salt
1/4 tsp. paprika
1 cup milk
1 8oz. can whole pearl onions (drained)
1 cup sour cream
2 eggs
1/2 cup margarine (melted)
1 - 8 1/2oz. pkg.corn muffin mix (Jiffy)

Preheat oven to 350º. After spinach is cooked & drained, melt two (2) Tbs. margarine in a small saucepan. Add flour, stirring constantly. Add spices. Slowly pour in milk, stirring until sauce thickens to a medium white sauce. Mix white sauce, spinach, onions, sour cream, eggs & melted margarine in a large bowl. Stir in muffin mix. Pour into a greased 1 1/2 quart glass casserole dish. Bake uncovered for about an hour - until a toothpick inserted in the center of dish comes out clean. Serve immediately.
