2 tbsp. salad oil
1/2 C chopped onion
1/2 C green pepper chopped (optional)
2 garlic cloves pressed
1 rib celery sliced
1 C long-grain rice
2 cans (16 oz.) diced stewed tomatoes
1 C clam juice
1/2 C water
12 oz. about 1 1/2 C. kielbasa sausage sliced into 1" chunks
1/2 tsp. salt
1/2 tsp. thyme
1/8 tsp. pepper
1/4 tsp. tabasco sauce
10 oz. cooked shrimp 1- 1/2 C.(any size)

In a 3 qt. saucepan or skillet, heat oil. Add onion, green pepper, garlic and celery. Saute 3 min. Add remaining ingredients except shrimp. Bring to a boil. Reduce heat, cover and simmer until most of the liquid is absorbed and rice is cooked. About 30 min. Stir occasionally as it will stick. Add more water if rice isn't done. Stir in shrimp. Cover and cook another 5 minutes till shrimp is heated through.

I usually try to use about equal parts shrimp and kielbasa. I also use a medium to large shrimp instead of the small salad shrimp.
