3 c. milk
1 c. sugar
4-1/2 tbsp. cornstarch
1-1/2 tsp. vanilla
3 eggs, beaten
1-1/2 tbsp. butter
Bananas, sliced
lemon juice
prepared pie shell

Directions:
Directions:
Combine sugar w/ cornstarch in a pan. Add milk to mixture and bring to a low simmer on med. - med. high heat, stirring constantly. Allow to simmer for five minutes. (continue to stir)

Temper the eggs (add a little of the pudding mix to the eggs and stir) then add egg mixture to the pudding and continue to cook for additional 2 - 3 minutes. (continue to stir)

Remove from heat and mix in the vanilla and butter. Pour into a prepared pie crust lined with sliced bananas. Once cool cover with whipped cream!

I think this recipe originated from Grandma Dero. Always use a little lemon juice on cut bananas to keep them from turning brown.
