Ingredients: Four (4) soft-ball sized cabbage heads 1-1/2 lbs. of butcher shop-made kielbasa or sausage 2 small onions diced 2 stalks scallion diced Good quality BBQ sauce Hot sauce? 1/2-stick melted butter or olive oil Salt and Pepper 2 cleaned coffee cans cut in half into rings for grilling A small metal pan with water for grilling

Directions:With a paring knife or forstner bit, cut a juice glass-sized cavity in the core end of the cabbage head for the stuffing. Dice the meat and pan-cook with the diced onion and scallion and a little oil if necessary. Remove from the heat, mix in BBQ sauce to taste and stuff the cabbage. Paint the outside of the cabbage liberally with the butter or oil. Salt and pepper as you see fit Mount the cabbage on the coffee can grilling rings and cook over indirect heat for an hour or so with a can or pan of water in there somewhere to add humidity. Putting foil across the bottom of the can half without a bottom will keep the cabbage from scorching. |

Notes: This unique variation on stuffed cabbage can probably use other seasoned meats. Think corned beef for St. Patty's Day, or ground beef with the traditional stuffed cabbage seasonings perhaps. Minced fresh garlic might be appropriate for milder meats. Stay away from mass-produced kielbasa's and major brand BBQ sauces to have good results.
