1 1/2 coconut rum (preferably Bacardi Coco) as it is not as sweet as other coconut rums
1 teaspoon of superfine sugar (This dissolves better)
2/3 ounce of fresh lime juice (1/2 Lime)
Fresh mint (A little goes a long way. Sometimes I skip the mint)
sparkling water (Pelegrino or Perrier)

Use a highball glass
Combine sugar and lime juice in bottom of glass.
Feel free to add the lime itself to the glass.
Add mint and Muddle/Mix. This will release the flavors and scent from the mint and lime.
Add Rum
Add Ice
Top off the drink with sparkling water

If you like coconut, chances are you will enjoy this drink. If the mint is too overpowering feel free to skip the mint as the drink is still quite refreshing.
