2 1/2 cups cooked and cooled rice (I use saffron rice)
8 ounces sour cream
1 can (4 ounces) green chiles
8 ounces Monterey Jack cheese, grated

Directions:
Directions:
Preheat oven to 350º.

Mix rice with sour cream and green chiles.

In a 1 1/2 to 2-quart casserole dish, layer half of rice mixture and half of cheese. Repeat, ending with cheese.

Bake 30 minutes covered; then remove lid and bake for an additional 10 minutes.
