2 whole chicken breasts
4 c. water
1 tbsp. dry sherry
2 slices peeled fresh ginger
5 green onions with tops
1/4 c. Chinese plum sauce
2 tbsp. rice vinegar
1 tbsp. vegetable oil
1tbsp. sesame oil
1 1/2 tsp. soy sauce
4 1/2 tsp. sugar
1 tsp. dry mustard
3 tbsp. slivered almonds
2 tbsp. sesame seeds
4 c. shredded iceberg lettuce
1 sm. carrot, shredded
1 1/2 c. bean sprouts (3 0z.)
1/4 c. chopped cilantro

1. Combine chicken, water, sherry, ginger and 2 whole green onions in saucepan. Bring to boil, reduce heat and simmer 20 minutes. Remove pan from heat and remove chicken and let cool.

2. Remove bone and skin and shred chicken i9nto long shreds.

3. Combine plum sauce, vinegar, oils, soy sauce, sugar and mustard in small bowl: mix and set aside.

4. Toast almonds until golden and fragrant, about 3 minutes. Toast sesame seeds until golden and begin to pop, about 2 minutes.

5. Cut remaining green onions with tops into 1 1/2 inch slivers. Put seeds and almonds in large salad bowl and add onions, lettuce, carrot, sprouts, cilantro, chicken and dressing. Toss to coat. Add bean threads, mix lightly and serve with ice tea.
