1 Slab of sponge cake
4 cups icing sugar
1 1/3 cup unsweetened cocoa powder
2 Tbls butter
1/2 Cup mlk
2-3 Cups desiccated cocunut

Directions:
Directions:
To make the icing

Cool the cake for at least 1/2 an hour in th fridge, then cut into squares or fingers

Combine the sugar and cocoa in a large bowl

Heat the milk and butter in a saucpan until the butter is melted

Add to the sugar/cocoa mix and mix to a fluid but not runny consistency

Putting it together

make a production line of sponge fingers, chocolate icing mixture in bowl, cocunut in a shallow dish and a coling rack to dry

Using a fork dip the sponge fingers into the icing into the icing, roll it in the cocunut covering it well, and then place on the rack to dry
