1 C chicken broth
1 pound orzo pasta
1 C dried cranberries
1 chopped cucumber
2 coarsely chopped carrots
1/4 C sliced green onion tops
1/2 cup chopped pecans
3 T balsamic vinegar
1 T each walnut and olive oil
1 T honey
2 tsp. mustard powder
salt & pepper to taste

Directions:
Directions:
Cook the orzo according to the package directions for eldente, using the chicken broth as part of the liquid. Drain but do not rinse. Add the cranberries, vegetables and nuts, mixing well. Blend the vinegar, oil, honey and mustard until smooth. Stir the dressing into the pasta. Serve well chilled or at room temperature.
