12 oz. wine vinegar
18 oz. water
1 carrot, chopped
i celery stalk, chopped
1 onion, chopped
juniper berries, peppercorns, allspice berries and bay leaf

1 beef roast
1 can cream soup (any vegetable variety)
gingersnap cookies
salt, pepper and sugar

Boil marinade ingredients for 10 minutes, cool and then pour over beef roast. Marinate for about 5 days, turning meat from time to time.

Remove marinated meat, reserving liquid. Place beef in crock pot, add a can of vegetable cream soup and some of the marinade. Cover and cook.

Crumble some gingersnap cookies in pot with beef during the last 2 hours of cooking time.

Season with salt, pepper and sugar.
