6-8 Medium Potatoes, peeled
4-6 Eggs, hard boiled
6-8 Small Sweet Pickles
2 Carrots
1 Medium Onion
1 Stalk of Celery

Dressing:
1 Cup Mayonaise
3 TBLs Vinegar
3 TBLs Sweet Pickle Juice
1/2 tsp Salt
1/2 tsp Sugar
2-3 grinds of Black Pepper
1/8 tsp Paprika

Directions:
Directions:
Boil Potatoes until soft but not mushy and cut into medium size pieces. Chop eggs and pickles into small pieces. Grate carrots on a fine grater. Finely chop onion and celery. Toss all vegetables lightly with a spoon until well mixed.

Dressing:
Place all dressing ingredients in a covered jar and shake well. (This method makes all the difference!) Pour dressing over vegetables and stir well.
