2 large Granny Smith apples, diced small
1 c. minced red onion
2 green bell peppers, diced small
1 small garlic clove, minced
1 chile in adobo, seeds removed, chopped fine,
or
1 small jalapeno, same
2 Tbsp. cilantro, chopped
1/2 tsp. kosher salt
1 Tbsp. olive oil
1 Tbsp. apple cider vinegar
1/4 c. lime juice

Mix all ingredients together, chill at least 2 hours .

This is best served the same day. For more heat, leave in seeds of chile. I use a food processor to save time!
