8 oz. stoneground wholemeal flour
8 oz. (225 g.) plain white flour
1 tsp. salt
3 tsp. baking powder
1 tsp. bicarbonate of soda
1 egg
14 fl. oz. buttermilk (Note: if buttermilk is unobtainable, substitute 8 fl. oz. natural yogurt beaten with 4 fl. oz. water, and increase bicarbonate of soda to 1 1/4 tsp.)

Mix all dry ingredients together in a large mixing bowl. Beat the buttermilk (or yogurt and water) with the egg and stir into a well in the dry mixture. Turn out on to a lightly floured surface and knead for a few minutes until it is smooth. Shape into two round cakes, or put into a lightly oiled 2 lb. (900 g.) loaf tin. The round cake is more traditional but a loaf tingives a good shape for slicing. Cut a d eep incision across the top, making a cross oin the found cake to allow for een risinng. Bake at 375 degrees for about 40 to 45 minutes. To keep crust soft,wrap in a clean tea towel when cool. A cup of sultanas or currants can also be added for a tea bread.
