12 Light green (long) peppers
1 and 1/2 C Italian bread crumbs
1 Stick butter or substitute
1 C chopped mushrooms
1 small chopped onion
small bottle capers
small can shrimp (optional)
1/2 C grated cheese (romano/parmesan)
1 tbsp.each oregano and basil
1/2 tsp. crushed garlic
olive oil
Tomato sauce as topping(optional)

Directions:
Cut off tops of peppers and throw seeds away.
Par boil peppers.
Saute mushrooms, onions,in large frypan.
Take off heat and add: capers,shrimp,cheese,oregano and basil and breadcrumbs. Melt butter and pour over mixture.
Stuff peppers and place them on a jellyroll pan or any oven proof dish. Drizzle olive oil over peppers and bake for 35min @ 375º

I made them for my Sister and her family, I apologized that Mom had not written this recipe down and I was winging it. I thought there was just a little something missing. My brother-in-law said there was. "You didn't burn them like she did everything." He was right.
