2 cups flour
2 cups sugar
1/4 tsp. salt
2 tsp. soda
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 cup vegetable or canola oil
4 eggs
1 tsp. vanilla
2 cups finely grated carrots
8 oz. pkg. cream cheese
4 tbsp. butter
1 tsp. vanilla
4 cups powdered sugar

In bowl, mix all dry ingredients and set aside. Peel and grate carrots and have ready. In a large bowl, beat eggs, add sugar, oil and vanilla. Stir in dry ingredients, and last carrots. Mix well. Bake in a 9 x 13" baking pan, greased and floured. Bake at 350º for 50 minutes or until toothpick comes out clean. Let cool. Mix cream cheese, butter, vanilla and powdered sugar until fluffy. Spread on cake.
