1 C. diced Bacon
1 C. Onion, diced
1/2 tsp. ground Black Pepper
2/3 C. Sugar
1-1/3 C. Water
3 Tbsp. Flour
3 tsp. Salt
2/3 C. Vinegar
8 C. sliced potatoes, boiled in their skins

Directions:
Directions:
Fry bacon, drain; reserving 4 Tbsp. fat. Place bacon and potatoes in a 3 qt. casserole. Put reserved fat back into skillet, heat and add onion, salt and flour. Cook gently. Add sugar, vinegar, pepper and water; bring to a boil. Pour mixture over potatoes and bacon. Cover and bake at 350º for 30 minutes.
