4 Tbsp. Butter
1 small Onion, diced
1/4 C. Flour
2 10-3/4 oz. cans Chicken Broth
1 C. Water
1/4 C. chopped Chives or Green Onion, optional
1/2 tsp. Dry Mustard
1 tsp. Worcestershire sauce
1/2 lb. Velveeta, cubed
1 C. stale Beer
1/4 tsp. Cayenne Pepper, optional
Salt and Pepper to taste
Popcorn for garnish

Directions:
Directions:
Melt butter in large saucepan. Saute onion in butter until translucent. Stir in flour, cook for 1 minute. Slowly stir in broth, cook and stir until mixture is thickened and smooth. Stir in water, chives, mustard, and Worcestershire. Simmer for 20 minutes covered. Add cheese, stir until it is melted. Add beer, cayenne pepper, salt, and black pepper. Bring to a boil. Serve in bowls, garnish with popcorn.
