2 large baking potatoes, cooked
1/3 cup butter
1 small onion, chopped
1/2 cup flour
2 tsps. each dill & parsley
1/4 tsp. pepper
1 can chicken broth
3 cups milk
1/2 lb. shredded cheddar cheese

Directions:
Directions:
Scoop out potato meat from skins. Melt butter in large saucepan over medium heat. Add onion; cook about 4 minutes. Stir in flour and seasonings. Cook, stirring constantly, until thickened, about 2 minutes. Add broth and milk; stir well. Cook until thick and bubbly, about 15 minutes. Add potatoes and cheese; stir until cheese melts.
