2 cups sifted all purpose flour
1 tsp salt
3 tsp baking powder
5 TBSP cold butter
about 2/3 cup milk

Preheat oven to 450º
Sift together, flour, baking powder and salt. Cut butter into flour until the butter is the size of small peas. Pour milk over flor mix stiring lightly till a soft dough forms, adding more milk if needed. Turn dough out onto floured surface and lightly knead 10 times. Roll out to 3/4 inch thich and cut into circles, place on ungreased cookie sheet and bake for 12 to 15 mins.

These bicuits are light and fluffy, the key is don't work the dough too much. You should be able to see tiny flecks of butter in the dough, use all ingrediants cold, straight from the fridge. Use a light touch, and handle dough gently.
