Papas Rellenas / Stuffed Potatoes Recipe

8 boiled, quartered potatoes
2 minced onions
1 minced green pepper
6 mashed garlic cloves
16 oz ground beef
2 Tbs. tomato paste
1/4 cup tomato sauce
1 egg
Extra virgin olive oil for sauteing
1/2 tsp. cumin
1/2 tsp. oregano
10 chopped pimento-stuffed green olives
1/2 cup raisins
1 cup flour
Oil for frying

Mash the hot, cooked potatoes. Beat egg and pour over mashed potatoes. Add salt and put aside. In frying pan, saute onions and peppers till soft. Add garlic and saute 30 seconds. Add meat, tomato paste and stir. Add rest of ingredients and simmer, uncovered, stirring occasionally, 30 minutes.

Mold mashed potatoes into 12 balls about size of a mandarin orange. Scoop out a hole in the center of each mashed potato ball. Stuff 1 1/2 Tbs. meat mix in the center of each "ball." Cover stuffed hole with the scooped-out mashed potato leftover. Lightly roll stuffed potatoes over flour. Refrigerate 30 minutes.

Fill heavy pan with frying oil. When oil is hot, fry stuffed potatoes until golden brown.
