Big Nanny's Green Stuffed Peppers Recipe

Ingredients: 8 green peppers 2 tbsp of butter 1/2 lb of ground beef 3 tbsp of minced onions 1 cup of cooked rice 1/2 tsp of salt 1/2 tsp of paprika 1/4 tsp of curry powder

Directions: |
Directions:Parboil 8 green peppers for 10 minutes or until tender. Drain the peppers. Place the parboiled peppers in a roasting pan and set to the side. In a skillet, melt the 2 tbsps of butter. Add the minced onion and sautee until golden brown. Drain off excess butter and sautee the beef. Mix salt and paprika with the beef and onion mixture. Add 1 cup of cooked rice. Mix ingredients together and gently add to Peppers. Bake at 350º for 15-20 minutes. |

Notes: Big Nanny is my maternal grandmother and she would make this delicious meal throughout my childhood. It's one of my favorites . I make it for myself and take it to work for lunch. It is an easy heat up quick meal. Use your imagination and stuff with veggies and lots of cheese. The possibilities are endless.
