1- 1/2 lbs beef for stew
1/3 cp all-purpose flour
3 tsb vegetable oil
1 cn (28oz) italian-style stewed tomatoes,undrained
1 cn (14 1/2 oz) beef broth
1 med onion, coarsely chopped
1/2 tsp pepper
1/2 tsp dried thyme leaves
3 med potatoes, peeled and cut into 1 inch pieces
2 cps baby carrots, 1 inch thick

Directions:

In Medium bowl,toss beef with flour to coat. In heavy large saucepan or Dutch Oven, heat oil over med-high heat until hot.
Add beef cook 5 minutes or until browned, stirring occasionally. Add tomatoes, broth, onion, pepper & thyme; bring to
boil over high heat. Reduce heat to low; cover and simmer 45 minutes or until beef is almost tender. Add potatoes and
carrots; return to a boil. Reduce heat; cover and simmer 45 minutes or until beef and vegetables are tender.©

This is not my mothers recipe but I had to use that name because when I eat this beef stew it reminds me of how good my mothers recipe is. You will love it
