1/2 cup smooth peanut butter
1/4 cup minced onion
1/2 cup lemon juice
1 tbsp. soy sauce
2 tsp. minced garlic
1 tsp. ground coriander (optional)
1/4 cup minced parsley

Combine all ingredients, blend approximately 1 minute until well mixed. Serve at room temperature.
