2 lbs Crawfish Tails
1 Large Onion
Parsley
Shallots
Butter
Bread Crumbs (Plain)
6 Bell Peppers
Salt & pepper to taste

Directions:
Directions:
Grind up crawfish in food processor with onions, bell pepper, parsley and shallots. Sauté in butter, add bread crumbs (use your judgement for consistency you like) and salt & pepper to taste. Cut and clean bell peppers, stuff with crawfish stuffing and top with a little bread crumbs and a pat of butter. Bake at 375º for about and hour or until peppers are soft.
