1/4 c. cornstarch
1/4 t. salt
1/4 c. milk
1 3/4 c. milk
3/4 c. creme of coconut
3 beaten eggs yolks
2 t. butter
1 c. coconut
2 t. vanilla

Directions:
Directions:
In medium saucepan combine cornstarch,salt stir in 1/4 c milk until smooth. Stir in remaining 1 3/4 c milk and creme of coconut. Cook and stir over meduim heat until thick. Cook and and stir 2 more minutes. Remove from heat add 1 c. hot mixture into beaten egg yolks. Return to pan and bring to gentle boil. Cook another 2 minutes. Remove from heat, stir in butter until melted. coconut and vanilla. Pour into baked shell. Chill for 3 hours
