1 ¼ lb. sirloin Steak, ½ to ¾ inch thick
1 tablespoon Cracked Pepper
2 ½ tablespoons Butter
¼ cup Sherry
1 teaspoon Onion, minced
Mushrooms, if desired
1 teaspoon B-V (beef extract)
Salt

Cut steak in serving pieces, removing bone. Press pepper into the steak with the heel of your hand. Let stand at room temperature for one hour. Some add salt with pepper – others say add salt before serving. So do whatever you like.

Brown steak in hot skillet in butter. After browning on each side, remove and add onion, sherry and mushrooms, then let it boil up for a minute. Pour drippings over steak and serve.

If you prefer steak more well done, put it back in the skillet for a minute before you pour up the drippings. We think steak prepared in this manner is as good as broiled and less trouble too.
