3 c. chicken stock
1 c. polenta (medium or coarse stone-ground yellow cornmeal)
1 c. half & half
salt and freshly ground black pepper

Bring the stock to a simmer in a medium-size, heavy-bottomed saucepan over medium-high heat. Slowly add polenta, whisking constantly. Reduce heat to medium-low and cook, stirring occasionally until the cornmeal begins to absorb the liquid, about 5 minutes. Add the half & half and let simmer gently until the polenta thickens to the consistency of soft mashed potatoes, about 20 to 30 minutes. Season to taste with salt and pepper.
