1/2 lb. penne pasta, dry
2 tbsp. olive oil
10 cloves garlic, minced
1/4 c. vodka
1-1/2 c. heavy cream
1/2 c. tomato sauce
salt & pepper to taste
Parmesan cheese, grated

Directions:
Directions:
Cook penne according to directions on package. Drain and set aside.

In a large skillet heat olive oil. Add garlic and cook for 30 seconds. Add vodka, ignite with a long match or lighter (carefully!!) and cook until flames dissipate.

Add cream and bring to a light boil and then quickly reduce heat so that the cream lightly simmers. Stir until mixture has reduced in volume by half. Add tomato sauce, season with salt & pepper. Add cooked pasta Stir until coated and heated through. Serve with grated Parmesan cheese.

Boiling the cream too heavily will cause it to curdle. Use canned tomato sauce, NOT tomato puree, diced or homemade sauce. They are too acidic and your cream WILL curdle. Riley & Ethan's absolute favorite!
