3 eggs, 3/4 c. oil, 1 c. sugar, 1 c. shredded carrots, 1 1/2 c. applesauce, 1 1/2 c. mashed papaya, 1 1/4 c. chopped walnuts, 1 tsp. salt, 4 c. flour, 1 T. baking soda, 1 t. cinnamon, 1 tsp. nutmeg.

Preheat oven to 325º. Lightly grease or apply cooking spray to 2 loaf pans. Combine eggs, oil and sugar. Mix on low speed for approximately 30 seconds. Add carrots, applesauce, mashed papaya and nuts. Mix on low speed for approximately 30 sec. Combine salt, flour, baking soda, cinnamon and nutmeg. Add to wet mixture and mix by hand until combined. Spoon batter into loaf pans. Bake for 55-60 minutes. Let rest in pan for approximately 10 minutes. Remove from pan and cool on wire rack.
