3 tablespoons cornstarch
1 2/3 cups chicken broth
1/4 cup vinegar
1/4 cup sugar
1 lb boneless, skinless chicken breasts, cut into cubes
1 medium carrot, sliced
8 oz pineapple chunks, drained
4 cups cooked rice

Directions:
Directions:
Combine first 4 ingredients in a bowl until smooth. Set aside.

Heat a heavy skillet over medium high heat. Stir-fry chicken 5-8 minutes until browned. Set chicken aside.

Stir cornstarch mixture and add to skillet. Cook until mixture boil and thickens, stirring constantly.

Return chicken to pan. Add carrot and pineapple. Reduce heat to low. Cover and cook 5 minutes or until chicken is no longer pink.

Serve over rice.
