1- 8 pound fresh ham shank or loin
5 cloves garlic, chopped
2 white onions, chopped
3 stalks celery, cut into medium size pieces
2 cups baby carrots
2 bay leaves
1/2 cup gray salt
3 tbsp black pepper
1 tbsp red pepper flakes
juice and rind of 1 lemon
juice and rind of 1 orange
1 cup dry white wine
3/4 cup evoo
3 -4 pounds Yukon Gold Potatoes

Trim as much as possible of the fat from the ham. Plaace in large non reactive bowl. Mix all the rest of the ingredients together and pour over ham. Marinate for at least 24 hours and up to 3 days.
Preheat oven to 450º. Remove the ham from the marinade and place in roasting pan. Remove everything from the marinade and set aside--discard the bay leaves. Pour 1 cup of the liquid over the pork and reserve the rest. Place in oven and immediately lower oven temp to 325. Roast 30 - 40 minutes per pound, uncovered. Baste with remaining marinade at 1/2 hour intervals. Remove from oven and let rest for at least 25 minutes before carving. Meanwhile, roast the carrots, celery and onions with about 3 pounds of potatoes, skin on and cut into large chunks. Roast them at the same temp as the pork and use some of the marinating liquid. Cook till potatoes are tender and golden. Season to taste

This fresh ham is incredible. The citrus flavors make it a true delicacy. The roasted veggies are a perfect side and everything comes together in a moist, mouth watering, family style meal. Serve this with home made applesauce and a crisp, dry chardonnay. What more could you ask for?
