1 1/2 cups Orzo
1lb fresh shrimp (frozen if necessary)
4 stalks of celery with leaves, finely chopped
1/4 c of minced parsely
1Tbsp capers, drained

Dressing:
1/3 c of mayonnaise
1/3 c of olive oil
3 Tbsp of white wine vinegar
1/2 tsp salt
1/4 tsp freshly ground pepper
1/2 tsp dillweed

Directions:
Directions:
Cook pasta until al dente, drain and toss with 1Tbsp of olive oil and chill. Simmer the unpeeled shrimp or frozen shrimp in water to cover until pink or defrosted and cooked through. Drain, shell and chop in t coarse pieces.
Mix dressing ingredients and toss in serving bowl with pasta, shrimp, parsley and celery. Taste for seasonings. Before serving garnish with capers.

I always had this for my dinner during our beach week. Stuart, I always added some dill weed to pasta, shrimp, and celery before I added the dressing.
