4 oz shredded pepper-jack cheese
8 oz shredded cheddar cheese
4 oz light cream cheese
1/2 c light mayonnaise
1/4 tsp dried thyme
3 c finely chopped sweet onion, divided

Directions:
Directions:
Heat oven to 375º.
Place cheeses, mayo, thyme and 1 cup onion in food processor. Process until fairly smooth. Stir cheese mixture in 2 cups finely chopped onion in a shallow 6 cup baking dish. Bake for 20 minutes. Stir. Bake 10 more minutes. Let cool slightly. Serve with crackers or toast.
