3 cups vidalia onions, pre cooked. (it will take about 10 raw onions to yield this much)
1/3 cup brandy
1 cup heavy cream
2 eggs, beaten
4 oz. fresh mushrooms, sliced
3 tbsp butter
3/4 cup shredded Fontina cheese

Directions:

Preheat oven to 350º. Grease a baking dish with butter. Make sure the onions are cooked, but not mushy. Drain well and pat with paper towels. Arrnge the onions on the bottom of the dish. Combine the brandy, heavy cream, eggs and mushrooms and pour over the onions. Dot with butter. Bake for 20 minutes or till bubbly and golden. Sprinkle with cheese, and bake for another 5 minutes.

This is a delicious side dish with just about everything. The brandy and cream make it almost desert like. It's wonderful with a thick grilled steak.
