8 oz. lasagna noodles
1 lb. ground beef
garlic - chopped or salt
onion - chopped or salt
12 oz. tomato paste
1 1/2 c. water
2 tsp. salt
1 T. parsley
1/2 tsp. Italian Seasoning
8 oz. ricotta cheese
2 eggs beaten
3/4 lb. mozzarella cheese, SLICED
1/4 c. grated parmesan cheese

Cook noodles according to package directions; drain. In a skillet, brown ground beef with onion and garlic; pour off fat. Stir in tomato paste, water, parsley, salt, and Italian seasoning; simmer 10 minutes. Meanwhile, blend ricotta and eggs. In a 9x2x13 baking dish, spread thin layer of meat sauce; top with half the noodles, all the ricotta mixture and half the mozzarella. Cover with half the remaining meat sauce and all remaining noodles. Top with remaining meat sauce and mozzarella. Sprinkle with parmesan cheese. Bake at 350º for 30 minutes. Let stand 10 minutes before cutting.

Freezes well. If you cook it too dry, add a thin layer of warm tomato/spaghetti sauce on top.
