1 small package instant pistachio pudding
1 1/2 cups miniature marshmellows (more if desired)
1 cup chopped pecans
1 can crushed pineapple (20 oz)
1 12 oz. tub cool whip
Directions:
Directions:
In a large bowl add pineapple with juice. Then add dry pudding and mix with spoon. Then add all other ingredients except cool whip and mix well. Then fold in cool whip. It will take about 5 minutes to assemble and is wonderful. Transfer to a smaller bowl to set up. It will keep several days in the refrigerator. Can be used as a salad or a dessert. May be served on a lettuce leaf.
