3/4 c. uncooked instant brown rice,
6 med. green bell peppers
1 lb. lean ground beef,
1 small chopped onion,
2 cans diced tomatoes (14.5 oz)
2 garlic cloves, minced,
1/4 tsp. ground black pepper,
1 can tomatoe sauce w/ garlic & onion

Directions:

Preheat oven to 350º. cook rice according to package directions, omitting salt.
Fill a large saucepan with water and bring to a boil. Cut the tops off the peppers and remove seeds and membranes. Place the peppers in the boiling water and boil for 3-4 min. Remove and drain.
In a large skillet, brown ground beef and oinio. Drain fat.
Add the brown rice and tomatoes to the skillet with ground beef and mix well. Add garlic and black pepper.
Place peppers right side up in a large baking dish. (I use a muffin pan set on top of a cookie sheet). Fill peppers with beef and rice mixture. Pour 1 tbsp. tomatoe sauce on top. Bake, covered, for 30 min.
