2 lbs ground beef
1 med chopped onion
1/8 tsp garlic salt
12 (8") flour totillas
2 tsp EVOO
8 oz shredded Colby/ Jack/ Cheddar cheese
2 (19 oz) cans of enchilada sauce
Optional toppings: salsa, guacamole, diced tomatoes

Directions:

1. Preheat oven to 350

2. In a heavy pan, brown ground beef and onions. Season with garlic salt and set aside.

3. In skilletlightly fry tortillas in oil. Spoon on meat mixture and cheese onto the center of the tortilla. Roll them up and arrange in a greased 9x13 baking dish.

4. Pour enchilada sauce over the enchiladas and cover with the remaining cheese.

5. Bake at 350 for 20 - 30 minutes.
