· 1 Tbsp fat-free mayonnaise
· 1 Tbsp fat-free sour cream
· 2 tsp frozen orange juice concentrate, thawed
· ¼ tsp grated orange peel
· 1 boneless skinless chicken breast, cooked and chopped
· 1 large kiwi, thinly sliced
· ½ cup mandarin oranges, drained
· ¼ cup finely chopped celery
· 4 lettuce leaves, washed
· 2 Tbsp coarsely chopped cashews

Directions:

1. Combine mayo, sour cream, orange juice concentrate and orange peel in small bowl. Add chicken, kiwi, oranges and celery; toss to coat.
2. Cover; refrigerate 2 hours. Serve on lettuce leaves. Sprinkle with cashews.
