· 1½ lbs salmon filet cut into 4 pieces, skin and bones removed
· 1 large fresh ripe tomato, seeds and excess pulp removed, diced small pieces, about ¼ inch
· 3 Tbsp finely minced onion
· 3 medium cloves garlic, pressed
· 1-2 Tbsp minced jalapeno pepper, or to taste
· 1 Tbsp minced fresh ginger
· 1 Tbsp coarsely chopped pumpkin seeds
· ¼ cup chopped fresh cilantro
· 3 Tbsp lemon juice
· 1 Tbsp extra virgin olive oil
· Salt and black pepper to taste

1. Mix together tomato, onion, garlic, jalapeno, ginger, pumpkin seeds, cilantro, 2 Tbsp lemon juice, olive oil, salt and pepper in a bowl and set aside.
2. Preheat a 10-12 inch stainless steel skillet over medium high heat for 2 minutes.
3. Rub salmon with 1 Tbsp lemon juice, and season with a little salt and pepper.
4. Place salmon in hot pan skinned side up. Cook for 2 minutes. Turn and cook for another 2 minutes, or until pink inside.
5. Top with salsa.
