Eggplant Pate' Recipe

· 1 medium eggplant
· 1/2 cup walnuts, chopped
· 1 clove garlic
· 1 1/2 tbsp red wine vinegar
· 1 1/2 tsp cumin
· 1 1/2 tsp salt
· 1/4 tsp pepper
· 2 Tbsp parsley, chopped

1. Slice eggplant in two. Place halves in glass baking dish containing 1 cup water and 1 tsp salt and 1 tsp cumin.
2. Bake at 375°F for 30 minutes or until eggplant is soft. Add water and bake longer if necessary to soften eggplant.
3. Once eggplant is soft, peel skin and dice. Mash eggplant and mix in chopped walnuts, garlic, red wine vinegar, 1/2 tsp cumin, 1/2 tsp salt, pepper, and parsley.
4. Bake at 375°F for 25-30 minutes.
5. Serve Eggplant Pâté hot or cold with vegetables or crackers
