1/2 c. rice (uncooked)
1/2 c. sugar
2 tsp. lemon peel (grated)
1/2 c. raisins
1 qt. milk (4 cups)
1/2 tsp. salt
1/2 tsp. nutmeg

Directions:
Directions:
Combine rice, milk, sugar, and salt; pour into buttered 1 1/2 quart baking dish. Bake in slow oven (300) 1 hour; stir occasionally. Add lemon peel, nutmeg and raisins; continue baking 1 1/2 - 1 3/4 hours. (2/3 c. brown sugar may be used in place of granulated sugar.)
