1 pkg granular yeast
1/4 c. lukewarm water for yeast
1 c. milk
1/4 c. sugar
1 tsp salt
1 well beaten egg
4-1/2 c sifted flour
1/4 c melted and cooled shortening

Directions:
Directions:
Scald milk. Measure salt and sugar and place in a large mixing bowl. Pour in milk, when lukewarm, add the yeast that has been softened in water. Add 2 cups flour and beat one minute. Add beaten egg and mix thoroughly.

Add cooled shortening. Beat one minute. Gradually add 2-1/2 c flour and mix to form a ball. Cover and let set 10 minutes.

Knead 5 minutes until dough springs back when you press your finger against it. Now cover the entire surface with fat.

Let rise about 2 hours, then punch it down. Cover and let stand 10 minutes. Form rolls.

Can be used for coffee cake (kuchen), rolls, parker rolls, buns.

For an 8" pie tin you use a ball of dough a little smaller than a baeball for each coffee cake. Roll out about as thin as pie crust, line pie tin with about 1" up the side

Hot oven, 400º F for 15 to 20 minutes for the rolls.

A note from Kim: when Dana and I prepare these, we cook the custard mixture (no fruit or crust), in the microwave until thick, but not set. Then cover the fruit and crust lined pie tins. Bake until custard is set and the top is light/golden and knife comes out clean.
